Tea Types: Black, Green, Oolong & White

How they are processed determines the type of tea they become. They all come from the 
same plant; the Camellia Sinensis. 

Tea that is processed by hand and plucked by hand is called orthodox tea. You can see the entire leaf and bud. When a tea is processed by machinery it is called CTC (Cut, Tear, & Curl). Many teas from India and Africa are CTC, like Assam. Not to say that there are not orthodox Assam teas, however CTC results in a finer cut tea and is ideal for iced tea or bagged tea.
