Cooking with tea is not a new concept although with the creation of the mocktail many people associate it with modern recipes. It has been suggested by anthropologists that tea was actually cooked and ate as a vegetable before it was steeped as a beverage. There are times throughout history that cooking with tea has been popular. It in the past it has been primarily to the shortage of meat. Smokey teas like the Lapsang Souchong was used in stews and soups when meat was scarce. Now it can be used when smoking meats and fish aren't feasible, but you still want that famous smokey flavor. Earl Grey tea is also a popular tea in baking, while we have used our Cherry Blossom tea in rice crispy treats and our Chamomile tea for an alcohol free wassail.
